Breakfast Egg Muffins

Egg Muffins

  • 7 eggs
  • 1/2 cup milk 
  • 1/2 onion diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 2 tomatoes, diced 
  • 3 scallions, sliced
  • chives for garnish
  • 1/4 tsp garlic powder
  • salt and pepper to taste
  1. Preheat oven to 400F, spray a muffin tin, line with silicone muffin liners
  2. Whisk together eggs and milk, and add the remaining ingredients. 
  3. Fill the muffin tin up 3/4’s of the way, and cook for 22-25 mins, or until a fork comes out clean.
