MAKES FOUR ½-CUP SERVINGS
¼ c. sugar
¼ c. water
¼ c. pineapple juice
¼ c. passion fruit puree
¼ c. orange juice
½ c. guava nectar
6 Tbsp. dark rum
1 Tbsp. lime juice
4 tsp. grenadine
In a large saucepan, make a simple syrup by boiling the sugar and water together for 2 minutes. Take the syrup from the heat and stir in the pineapple juice, passion fruit puree, orange juice, guava nectar, rum, lime juice, and grenadine. Chill the mixture if it’s still slightly warm and then freeze in an ice-cream maker according to the manufacturer’s instructions
