Berry, Banana and Stale Cake Revival Parfait
Instead of throwing away the delicious cake leftovers you have on your counter, transform them into a new sweet treat. Have berries on the verge of being thrown away? Use them for this delicious new recipe.
Cube older pound cake, cornbread, or other sweet breads and cakes into ¼ inch cubes. Toss in a drizzle of vegetable oil and granulated sugar. Bake at 350 degrees F for approximately 20 minutes or until toasted and dried. These will turn into delicious crispy toppings for your next ice cream sundae or yogurt parfait.
As a vegan and healthy alternative to ice cream try this one-step delicious frozen banana treat. Peel and freeze 6 over ripened bananas. When fully frozen, blend in a food processor until smooth (try adding cocoa powder for a chocolate version). You can eat the ice cream right away or transfer to an airtight container and freeze again to firm up.
Turn softening berries into a tasty compote to pair with your parfait. Try using berries that you would first think to throw away as they are often more sweet than freshly purchased berries. Since they will be cooked down, the texture won’t affect your final product. Be sure to use organic fruit!
Mix Berry Compote:
- 1 cup fresh berries of your choice
- ¼ cup water
- ½ cup sugar
- 1 tsp vanilla extract
Place all ingredients in saucepan. Bring to simmer. Chill.
In a serving dish start with a small serving of your berry compote, top with a scoop of banana ice cream and finally garnish with your crispy cake crumbs. Enjoy!
