Miraval’s Watermelon Jicama Salad

This summertime dish is cool, refreshing, and perfect for guilt-free indulgence.

Yields 10 servings
(Gluten-Free, Dairy-Free & Vegan)

Watermelon – 5 cups  (about ½ watermelon) cut into 1-in. batons
Jícama julienned -1 root
Sunflower Sprouts – 1 cup
Paprika – ½ tsp
Honey – ¼ cup
Lemon Juice – 2 tbs.
Lime Juice – 2 tbs.
Sea Salt – ¼ tsp.

Serving Amount: About 1/2 cup
Calories Per Serving: 50

Directions: In a mixing bowl combine watermelon, jícama, and sunflower sprouts. In a separate bowl mix remaining ingredients and drizzle dressings over salad. Toss gently with dressing just before serving, as this will keep the sprouts firm.

Tumeric – 4 g
Cinnamon– 2.5 g
Cayenne– 1 pinch
Fresh Grated Ginger – 13 g
Black Pepper – 2 g
Vanilla Bean– ½ pod
Clove – 2 g
Honey – 1/4 cup

Serving Amount: 12 oz
Calories Per Serving: 130

Method: Bring all ingredients to a simmer, then strain. Let cool, and serve.
